The Olives Dessert Table

Spectacular Restaurant Desserts You Can Make at Home

by Todd English

This is a collection for home cooks who want to take the time and effort to create a truly memorable end to a meal, and will not be swayed by lengthy ingredient lists or calories alike. Chef/owner Todd English of Olives in Boston has teamed with his pastry chef Paige Retus to present 43 spectacular dishes made up of building block recipes, for a total of 145 desserts.

The secret, says English, is to “take very simple, often very common things and layer them together to compose a more complex dish.” The result is elaborate dishes like White Chocolate Banana Bread Pudding with Caramel Semi-Freddo and Boozy Caramel Sauce, though for those days when you’re feeling less energetic, you may just opt for great Banana Bread…

In all, the ingredients and dishes themselves are familiar and comfortable, yet served with a twist—Apple-Topped Gingerbread with Hot Applesauce and Cinnamon Ice Cream.

The philosophy for the desserts served at Olives is the same as that for the entrĂ©es: “We like to pull things out of the country and dress them up” says Todd.
